Tzatziki (Yogurt and cucumber spread)

Ingredients

  • 2 pound Greek Yogurt drained
  • 1 1/2 medium Cucumbers
  • 4 Garlic Cloves
  • 4 tbsp Greek Olive Oil
  • 2 tbsp Dill finely chopped
  • 1 tbsp Red Wine Vinegar
  • 1 tsp Salt

Directions

Rinse the cucumber, grate it on the thick side of the grater and place in a strainer. Squeeze with your hands to remove any excess liquids.


Peel the garlic cloves, put them in a food processor, add salt and mix to combine to a paste.


Put in a bowl the olive oil, vinegar, garlic/salt mixture and mix well to combine.


In another bowl we put the yogurt, the dill, the cucumber, drained and stir to combine. Add the garlic/vinegar mixture and continue stirring. Cover the bowl and keep "tzatziki" in the fridge for at least 1 hour.


Stir well before serving.
