We rinse the sardines and strain them.
Preheat the oven at 350 degrees F.
Trim the crust of the bread slices and chop the rest in a bowl. Add the garlic, parsley, eggs, feta cheese, salt and mix to combine.
Stuff the sardines with the mixture and thread them through a skewer, alternating with a bay leaf.
Put them in a small baking pan, drizzle with the olive oil, sprinkle with salt to taste and bake in the preheated oven for about 15-20 minutes.
Serve the stuffed sardine skewers, garnished with arugula leaves.
