We rinse the pork, drain and cut into small pieces. Dredge them in flour and shake to remove excess.
In a hot pot, stir to sauté the onions, until caramelized. We pour in the olive oil and when hot, stir to sauté the leak and pork, for about 3-4 minutes.
We deglaze with the wine and allow reduction.
Then add the mustard diluted in the water, salt and pepper to taste and boil over medium heat for about 30 minutes.
In the meantime, to clean the mushrooms, lightly rub them with a damp kitchen towel and then slice them.
Add the mushrooms into the pot, stir and continue boiling for an additional 20-25 minutes, until both pork and mushrooms are tender and the sauce has thickened. We may add some more boiling water if needed. Stir regularly, to avoid sticking to the bottom of the pot.
We remove the pot from the heat and serve the “psaronefri krasato me manitaria”. You may add some rice as a side dish and serve garnished with parsley.
