We separate the egg yolks from the egg whites and lightly beat the yolks into a small bowl.
Sift into another bowl the flour, cocoa powder and baking powder.
Melt margarine in a small saucepan and remove saucepan from the heat.
Finally preheat the oven at 350o F.
Now we are ready to get started: Put the egg whites in the mixer’s bowl and beat. When the mixture starts rising, gradually add the sugar and vanilla extract and continue beating, until hard peaks have formed.
Remove the bowl, add the egg yolks, grated chocolate and gently mix. Add the flour mixture and using a plastic spatula fold gently from the bottom up, so as for the mixture to remain fluffy.
Then we add the margarine and fold gently. Pour the batter into the prepared loaf pan and bake in the preheated oven for about 40-45 minutes. To check if our cake is ready, insert a toothpick or kebab stick into it. If it comes out clean, without any dough remaining, then it is ready.
Remove pan from the oven and allow cooling for 10 minutes. Then to unmold the cake, flip pan onto a platter and let it cool completely.
We garnish with grated chocolate and serve the chocolate pound cake.
