We remove the pan from the oven, let rest for 5 minutes and serve.
Place the smelts on top and pour over the olive oil and water. Bake in the preheated oven for about 40-45 minutes.
Put in a bowl the tomatoes, onions, garlic parsley, lemon juice, salt and pepper to taste and mix to combine. Pour mixture into a medium sized baking pan and spread it evenly.
Rinse the smelts, drain them and sprinkle with salt and pepper to taste.
Preheat the oven at 350 degrees F.
