Oven roasted lamb with rice and yogurt

Ingredients

  • 2 pounds Lamb
  • 2 cups Rice
  • 1 cup Greek Yogurt strained
  • 1 medium Red Onion finely chopped
  • 1 Garlic Clove finely chopped
  • 1/2 cup Greek Olive Oil
  • 6 cups Water
  • A Pinch of Salt and Pepper

Directions

Put lamb pieces in a pot, add water, onion, garlic, and boil for 30 minutes. Remove froth when needed.


Preheat the oven to 350 degrees F.


Transfer the ingredients from the pot into a medium sized baking pan, pour over the olive oil and bake in the preheated oven for about 15-20 minutes.


Then, add the rice, stir lightly and continue baking for another 20 minutes. We can add some more boiling water, if needed.


Once the rice is done, turn off the oven and allow lamb and rice to sit in the oven for about 5 minutes, until liquids are absorbed.


Add the yogurt, stir to combine and serve. You may eliminate yogurt, if not an acquired taste.
